ICING AND VARIATIONS ON THE RECIPES

COOKIES:

  • Why not try adding 50g of raisins?

  • 50g of chopped nuts  or desicated coconut also works really well.

  • You can also try 1 teaspoon of cinnamon for a twist.

  • You could also try making a gaint cookie like the ones popular in the 80's early 90's and icing the top wih a message......

 

BROWNIES:

  • We love making spiced chocolate orange brownies using 1 x tspn cinnamon and 1 x tspn mixed spice and substituting orange juice for milk. Finally add the zest of one orange.  Yummy!

 

LEMON COCONUT AND CHOCOLATE CAKE:

  • We think these are pretty awesome as they are but you can always make them in paper cases and have fairy cakes (don't forget to reduce the baking time consderably here).

  • Icing really completes these cakes. Here is a simple glace icing recipe to try (although there are tonnes of other recipes to try).

  • CHOCOLATE ICING: Mix 225g icing sugar with 1 tbsp cocoa powder and add 2-3 tbsp freshly boiled water gradually. Its important to add the water very slowly and mix until its got the consistency or melted chocolate. Too much water means it won't set.  Stir thoroughly and cover cake. Leave to set before cutting. 

  • LEMON ICING: As above but without the cocoa and replace water for lemon juice.
